Is there a trend towards vegan or vegetarian food or are meat dishes still the rage?
Of course, there is a trend. But the typical things like gyros, cordon bleu, and sauerbraten always go well. Vegan is still more of a fringe phenomenon, but there are more and more of them. We notice that there is an awareness. And we are constantly improving in this area.
The University of Bayreuth is committed to sustainability. How is this implemented in the Cafeteria, Frischraum, and Café?
We have been using the re-bowl system and the reusable cups for some time now. So we are gradually moving away from disposables. But disposable was never really a big issue for us. That only came with the pandemic; before that, people usually ate at our place.
How has working and planning changed for you through the pandemic?
We have adapted to the Covid situation. It's not worse, but you have to be more flexible. I assume that when everyone comes back, things will settle down. The next three weeks will show how things will continue.
The "Bavarian Week" is a highlight in the Cafeteria calendar. Will it also take place this year?
There will definitely be no Bavarian Week this year. It's always been quite a ruckus, and the students have always liked it a lot. It was a lot of effort for us. But we were happy to do it because we saw that the students had fun. For example, the students came in traditional costume and the Bavarian food was a hit. But under the current conditions it is simply not feasible.
