Why not bake Christmas cookies vegan? We asked ourselves this question this year as well and courageously dared to veganize the three top classics "Vanillekipferl", "Husarenkrapfen" and "Spekulatius". The result is impressive - and tastes great, Abraxas also thinks so.

1) Vegan vanilla croissants (approx. 25 pieces, 90 minutes)

Ingredients:
280 g flour
70 g sugar
100 g ground almonds
210 g cold vegetable margarine
1 vanilla pod
2 tablespoons powdered sugar
2 tablespoons vanilla sugar

Preparation:

  • Mix flour, sugar, the pulp of a vanilla pod and ground almonds. Add the cold margarine in flakes.
  • Knead the ingredients into a smooth dough. If the dough is too dry, you can add some cold water.
  • Form the dough into a roll with a diameter of about 3-4 cm, wrap it in cling film and put it in the fridge for 1 hour. Preheat the oven to 180°C top/bottom heat.
  • Then cut the roll into 1 cm thick slices and roll each slice into small vanilla crescents. Place the vanilla crescents on the baking tray with a little distance between them and bake in the oven for 12-15 minutes.
  • Mix vanilla sugar and powdered sugar in a bowl. Turn the vanilla crescents in it while they are still hot. Let them cool down afterwards.

2) Vegan hussar doughnuts (approx. 20 pieces, 90 minutes)

Ingredients:
150 g flour
50 g sugar
40 g ground hazelnuts
1 sachet vanilla sugar
100 g cold vegetable margarine
about 50 g jam (e.g. Hiffenmark)

Preparation:

  • First mix flour, sugar, vanilla sugar and ground hazelnuts in a large bowl. Add the cold margarine in flakes and knead everything into a smooth dough.
  • Wrap the dough in cling film and refrigerate for 1 hour.
  • Then form small balls of the dough with a diameter of about 2 cm. Use a spoon handle to press small hollows into the balls and fill them with jam using a small spoon or piping bag.
  • Preheat the oven to 180°C top/bottom heat and bake the hussar doughnuts for 12-15 minutes.
  • Then dust them with powdered sugar and let them cool down.

3) Vegan Spekulatius (approx. 40 pieces, 90 minutes)

Ingredients:
350 g flour
100 g sugar
170 g vegetable margarine
75 ml plant drink (e.g. on soy or almond basis)
2 teaspoons Spekulatius spice (heaped)
1/4 teaspoon grated lemon peel
1/4 teaspoon vanilla ground
1 teaspoon baking powder
a pinch of salt

Preparation:

  • Mix all dry ingredients well. Add the vegetable drink and margarine.
  • Knead everything into a smooth dough. If the dough is too sticky, add some more flour. If it is too dry, a little margarine will help.
  • Wrap the dough in cling film and put it in the fridge for 30-60 minutes.
  • Preheat the oven to 170°C top/bottom heat.
  • Take the dough out of the fridge and knead briefly in portions.
  • Roll out the dough (approx. 3-5 mm thick) and cut out cookies.
  • Bake the cookies for about 10-15 minutes.
  • Let them cool down.
