There is plenty of choice of fresh food in the Frischraum.

UBTaktuell: Mr. Wolf, many students are coming to campus for the first time right now. Can you explain the difference between the Cafeteria, Frischraum, and café?

Dieter Wolf: The café is more for in between. You can have a snack there at lunchtime or a coffee and piece of cake. The Frischraum is an additional offer alongside the Cafeteria. However, fresh food is cooked in both facilities. The prices can be a little higher at the Frischraum as higher quality products are used there. For example, we don't have wild salmon or game on the menu in the regular Cafeteria. That doesn't mean that the things in the Cafeteria are worse. But they are sometimes simpler.

How many meals do you plan per day?

We expect about two thirds of the food compared to before the pandemic. That means 2,500 to 2,700 meals a day, if we take everything together.

The cafeteria also pays attention to sustainability: coffee is served in reusable cups.

Is there a trend towards vegan or vegetarian food or are meat dishes still the rage?

Of course, there is a trend. But the typical things like gyros, cordon bleu, and sauerbraten always go well. Vegan is still more of a fringe phenomenon, but there are more and more of them. We notice that there is an awareness. And we are constantly improving in this area.

The University of Bayreuth is committed to sustainability. How is this implemented in the Cafeteria, Frischraum, and Café?

We have been using the re-bowl system and the reusable cups for some time now. So we are gradually moving away from disposables. But disposable was never really a big issue for us. That only came with the pandemic; before that, people usually ate at our place.

How has working and planning changed for you through the pandemic?

We have adapted to the Covid situation. It's not worse, but you have to be more flexible. I assume that when everyone comes back, things will settle down. The next three weeks will show how things will continue.

The "Bavarian Week" is a highlight in the Cafeteria calendar. Will it also take place this year?

There will definitely be no Bavarian Week this year. It's always been quite a ruckus, and the students have always liked it a lot. It was a lot of effort for us. But we were happy to do it because we saw that the students had fun. For example, the students came in traditional costume and the Bavarian food was a hit. But under the current conditions it is simply not feasible.

The food is always fresh cooked in the Mensa and the Frischraum.

Are there any other specials planned for the winter term?

Before Christmas, we used to have a Winter Fairy Tale Week, which got us in the mood for the Christmas season. We are planning to do the same this year.

What do students have to bear in mind if they want to eat at your place?

Not much, actually. The registration, i.e. logging in via UniNow, for example, has been omitted since Friday. Then you just have to bear in mind that 3G applies here. That is also checked. And of course your mask has to be worn until you’ve reached your seat.
