Soon there will be organic food in the Frischraum
It took about a year to get organic certification. Now the planning is underway.
In a video posted on Facebook, Dieter Wolf, head of the catering department of the Studentenwerk Oberfranken (SWO), announced that the Mensa now has organic certification. But what is behind this?
Early on, the Bayreuth canteen also had vegan and vegetarian dishes in its range. "That was greatly underestimated," says Wolf. "The vegan and vegetarian dishes are very well received." Wolf is hoping for a similar response to the future organic menu.
Currently, the implementation of organic dishes is being examined. Recipes are being created, prices calculated and it is being looked at how this offer can be integrated into the general menu. "We are currently planning to offer organic dishes in the Frischraum from November onwards," he says. There will also be dishes that have an organic content, for example. "So it may also be that there will be chicken breast with organic vegetables," Wolf explains.
However, it took a long time before the Mensa was certified organic. For about a year, Wolf and his team struggled to meet the specifications. "For example, it has to be ensured that the products are stored separately from the conventional products." In addition, suppliers have to be found, separate processing has to be ensured and suitable recipes have to be created.
Dieter Wolf, who is appreciated by the Bayreuth students and also always has an open ear for suggestions from the student body, is therefore convinced that the organic offer will be well received. "It is simply also in keeping with the times that we offer organic dishes."
